This heavenly wrap is entirely vegan and guaranteed to be delicious! For the meal preppers out there, make the chickpea mash up to 4 days in advance and wrap it up when you are ready to eat.
1. Smash Garbonzo beans with a whisk, potato masher, or fork
2. Add EVOO, Balsamic and Seasonings to the mixture and continue mashing until well combined
3. Fold in almonds and diced produce, mix until thoroughly combined
1. Use your favorite tortilla at least 10” in diameter (We chose Tomato Basil)
2. Add a light handful spring mix for added nutrients and flavor
3. Wrap it up, cut in half, and serve!
PRO-Tip: Toast it off in a panini press brushed in Sciabica’s EVOO for a delicious toasted wrap!
