Red, White, and Blue Chia Pudding Parfait

A simple yet delicious plant-based breakfast that will surely get you in the Red, White, and Blue spirit. The sweet tang of reduced Sweet Peach balsamic and the fresh citrus pop of Orange EVOO granola finish of the creamy and sweet Chia Pudding perfectly. Add some fresh berries of your choice and you have some healthy deliciousness! 



  • 2 Cups
    Chia Seeds
  • 8 Cups
    Almond or Coconut Milk
  • 2 Tablespoons
    Agave or Honey
  • 3 Cups
    Raw Oatmeal, Old-Fashioned
  • 1 Cup
    Raw Almonds, Sliced
  • 1 Cup
    Dried Cranberries
  • 2 Cups
    Raw Pecans, Chopped
  • 1 Cup
    Honey or Agave
  • 1/2 Cup
    Sciabica’s Orange EVOO
  • 1 Teaspoon
    Ground Cinnamon
  • 1 Pinch
    Sea Salt, To Taste


  1. Chia Pudding
    a. Combine all ingredients in a bowl
    b. Shake or stir to evenly distribute
    c. Cover in plastic wrap and let it sit overnight

  2. Orange EVOO Granola
    a. Pre-heat oven to 300 F
    b. Combine ingredients in a large bowl
    c. Evenly mix all ingredients
    d. Line a baking sheet with parchment paper and evenly coat with 1 tablespoon of Sciabica’s Orange EVOO to prevent sticking
    e. Spread mixture over parchment paper in a tin even layer
    f. Bake @ 300 F for 45 minutes, stirring occasionally

  3. Sweet Peach Balsamic Glaze
    a. In a saucepan place over medium-low heat add 2 cups of Sweet Peach Balsamic
    b. Reduce by ⅔ or desired consistency

  4. Parfait
    a. Place 1 cup of pudding mixture into a bowl
    b. Top with granola and fresh blueberries and strawberries
