Pumpkin Spice Bars

This tasty treat is just in time for all the fun of Fall. There is something about the sweet Pumpkin Spice flavor that makes fall a little more magical.

Ingredients

  • 4
    Eggs
  • 1 3/4 Cup
    Sugar
  • 1/4 Cup
    Molasses
  • 1/3 Cup
    Sciabica's Orange Extra Virgin Olive Oil
  • 16 Ounces
    Canned Pumpkin
  • 2 Cups
    Flour
  • 2 Teaspoons
    Baking Powder
  • 1 Teaspoon
    Baking Soda
  • 2 Teaspoons
    Cinnamon
  • 3/4 Teaspoons
    Ginger
  • 3/4 Teaspoons
    Salt
  • 1/8 Teaspoon
    Cloves
  • 1/2 Cup
    Currants
  • 1/2 Cup
    Walnuts
  • 2 Ounces
    Cream Cheese (room temp.)
  • 2 Tablespoons
    Orange Juice Concentrate
  • 2 Cups
    Powdered Sugar

Instructions

  1. THE BARS:

    In a large bowl, beat the eggs and mix in sugar, molasses, orange olive oil, and canned pumpkin.

  2. After mixing well, add flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, currants, and walnuts.

  3. Spread the batter onto a medium sized baking sheet.

  4. Bake at 350 degrees for 25-30 minutes, until golden brown.

  5. THE FROSTING:

    In a bowl, mix cream cheese, orange juice concentrate, and powdered sugar. (Add extra powdered sugar if necessary to reach the consistency of traditional frosting.)
