Oven Fried Potato Wedges

When combing through our reviews, one of the most common uses for each type of our flavored olive oils is oven frying potatoes. If you know how to do it right, any olive oil will help to make an incredible appetizer or side dish even better. In this particular recipe, we used Mediterranean Medley. That being said, honorable mention goes to both Garlic and Jalapeño olive oils. In this recipe, we used Yukon Gold, Red, Purple, and Sweet potatoes.


  • 4
    Potatoes (Yukon Gold, Red, Purple, and Sweet)
  • 1 Tablespoon
    Garlic Powder
  • 1 Tablespoon
    Smoked Paprika
  • 1 Teaspoon
  • 1 Tablespoon
    Dried Italian Seasoning
  • 1/2 Cup
    Grated Parmesan Cheese
  • 1 Tablespoon
    Sea Salt
  • 1 Tablespoon
    Fresh Ground Black Pepper
  • 1/3 Cup
    Sciabica's Mediterranean Medley California Olive Oil


  1. Cut each potato evenly into 8 slices.

  2. In a large mixing bowl, add olive oil and all dry ingredients. Wisk everything together.

  3. Toss potato wedges in the olive oil and spice mix. Make sure that all wedges are evenly coated and place on the foil lined baking sheet.

  4. Place baking sheet in a pre-heated 390°F oven for 40 minutes. For more done wedges, cook for 50 minutes.

  5. Let cool and enjoy!
