Jalapeño Olive Oil Bean Dip

This recipe makes a super simple appetizer or side dish. The sweetness of the onion cooked with the heat from Jalapeño EVOO creates a palate pleasing mix of flavors in a creamy bean dip!


  • 1/2
  • 1/2 Cup
    Sciabica's Jalapeño Extra Virgin Olive Oil
  • 16 Ounces
    Pinto Beans
  • 1/2
    Wheel of Queso Fresco (Mashed)
  • 1 Teaspoon
    Sea Salt


  1. Slice half of one onion into strips. Add onion to frying pan with Jalapeño Extra Virgin Olive Oil. Cook over medium-high heat until soft and slightly browned.

  2. Once Onion is caramelized, add Pinto Beans and salt. Continue cooking over medium-high heat for 8-10 minutes. Stir occasionally.

  3. Mash all of the ingredients together in the pan.

  4. Mash half of a wheel of Queso Fresco into crumbles.

  5. Transfer Bean Dip to a serving bowl and garnish with Queso Fresco!
