Jalapeño Olive Oil Guacamole

Ingredients

  • 3
    ripe avodados
  • 3 Tablespoons
    Sciabica's Jalapeño Olive Oil
  • 1/8 Cup
    Cotija cheese
  • 1
    Lemon
  • 8
    yellow cherry tomatoes
  • 1/8 Cup
    minced cilantro
  • 1
    clove garlic, minced
  • 2 Teaspoons
    sea salt
  • 1 Teaspoon
    fresh cracked black pepper

Instructions

  1. Cut avocado in half and scoop into a medium size bowl (or mortar)

  2. Chop tomatoes into quarters and add to avocado

  3. Squeeze the juice from 1 lemon into the bowl

  4. Mix in remaining ingredients and use a spoon (or pestle) to "mix & mash" ingredients to a puree

    Your last version of this recipe did not have cheese as an ingredient and it is wonderful! It is totally paleo. The only guacamole recipe I use now. Just enough heat.
