Avocado Salad

This “salad” can be served as a side salad or as a topper for halibut, burgers and sandwiches. Jonathan Sciabica loves to use Jalapeño Olive Oil. Feel free to experiment with your favorite!


  • 4
    Ripe Avocados - Diced
  • 1/2
    Red Onion - Diced
  • 1/4 Cup
    Feta Cheese Crumbles
  • 1 Tablespoon
    Lemon Juice
  • 3 Tablespoons
    your favorite Flavored or Varietal Olive Oil
  • Sea Salt & Black pepper to taste


  1. Combine all ingredients in a small bowl except feta cheese. Stir well and allow to sit for 10 minutes.

  2. Add 1/2 of the feta cheese and stir well again.

  3. Sprinkle the remaining feta cheese on top before serving.

    I tried this as a side dish and it wasn’t bad. It’s tangy but good. Filling.
