This “salad” can be served as a side salad or as a topper for halibut, burgers and sandwiches. Jonathan Sciabica loves to use Jalapeño Olive Oil. Feel free to experiment with your favorite!
Combine all ingredients in a small bowl except feta cheese. Stir well and allow to sit for 10 minutes.
Add 1/2 of the feta cheese and stir well again.
Sprinkle the remaining feta cheese on top before serving.
