As the California sun-kissed black olives reach their peak of ripeness, usually in February, we harvest and cold-press our golden Mission olive oil. Our Sweet Mission is ‘unfiltered’ and superb as a heart-healthy butter replacement – enhancing the flavor of pastas and pastries alike. Why is Sweet Mission Olive Oil the single most “buttery” extra virgin olive oil on the market? Fully ripe ‘late harvest’ Mission olives (the only native California variety) result in delicate, sweet flavors without the bitterness or pungency of the ‘early’ harvest olives. Only Mission variety olives have fully adapted to the California climate (many trees are well over 100 years old) allowing the olives to remain on the tree for several months after most producers have completed their harvest – becoming ever riper and sweeter.
