Sciabica’s olives are carefully harvested at different points of ripeness to capture distinctive flavor characteristics for superb taste. As the California sun-kissed olives reach their peak of ripeness, we harvest and cold-press our Arbequina olives – combined with some propriety techniques in the mill, the result is an olive oil with a lush delicate flavor. It might not be quite as sweet and delicate as Mission Spring, and you may pick up a very slightly peppery finish, but it’s very “fruity” and not bitter. This olive oil is ‘unfiltered’ and superb as a heart-healthy butter replacement – try using it with a touch of sea salt on popcorn
